Capt. Rajesh Todiwan
A Physics graduate from the KC College Mumbai, Capt. Todiwan was into sports and was the captain of the college Cricket and Hockey teams. His love for the sea and all adventures that it offered made him join the NIPM in Chennai to undergo his maritime studies and pre sea training. Following which VShips recruited him as a deck cadet. He rose to the rank of Master Mariner. He has worked on all types of tankers such as parcel chemicals, crude and product tankers etc. In his career spanning over 24 years Capt.Todiwan has worked with many prestigious companies to enhance and enrich his knowledge of the trade.He also understands the importance of good coaching that helps people to deliver the best. He believesin hands-on training and delivering great performance on the shop floor than being brilliant in theory. In his own professional experience he has followed that principle and has lived his vision. He has travelled the world and seen many aspects of Hospitality and Tourism industry. The industry fascinates him, hence he wanted to create a learning centre that would give the basics of quality service education and inculcate the art of great hospitality in the trainees. He also had a vision that with the right training and guidance even the average individuals can become star performers. Spectrum Academy is his dream project.
Vibhor is a graduate from Institute of Hotel Management, Mumbai, which has consistently been ranked as the best college for Hotel Management in India. He was a part of the prestigious Taj Management Trainee Program where he learned the nuances of a modern commercial kitchen. He is an educationist by profession but a Chef at heart. He forayed into consulting quite early in his career which exposed him to various aspects of set-up and operations of hospitality related establishments at various geographical locations across the country. He has been a Training Consultant to Centaur Hotels, which is a subsidiary of Air India and Operational Consultant to “Comesum” chain of fast food outlets, which have their presence at major railway stations in India; many hotels such as Hotel Signature (this project was handled from inception to post launch), Meerut, Hotel Allahabad Regency, Allahabad and Hotel Siam International, New Delhi; Clubs such as AAUI, New Delhi; Educational Institutes like Hotel Craft Institute, Mumbai and New Delhi. Driven by his passion for teaching and training, he has moved from Hospitality Operations to Education.

An alumnus of the 1997 batch of Institute of Hotel Management, Catering Technology & Applied Nutrition Mumbai, Ms. Todiwan started her career with the Taj Group of hotels (Taj Mahal Palace and Tower, Mumbai). After 4 years of working in the Hotel operations, she joined her Alma mater IHM Mumbai as a faculty in the Rooms Division Management, where she worked for 6 years. Equipped with rich experience in hotel operations, teaching and training, she came on board the Apeejay Institute of Hospitality in April 2007 and is currently working with the Apeejay Surrendra Group. She is also an educational counselor and follows her passion of guiding young people in making good career choices. She is a Master trainer for the Certified Skill Trainer program of the NSDC. She has conducted training programmes for many corporates such as the Wakefield and Cushman, Ras Resorts and Treat Resorts, SBI, CII and for the Additional Skill Acquisition Program (ASAP) of the Government of Kerala, to name a few.

He is a seasoned hotelier with over three decades of experience ranging from being a chef to the Prime Minister of India to being an Executive Director of SAJ Flight Services, which is one of the largest airline catering companies in India. During his career he has worked as head of kitchens at prestigious places like the Hyderabad House in New Delhi which caters to most of the banquets hosted by the Government of India, Training Manager of one of the largest chains of Hotels undertaken by the Government of India and General Manager of Five Star Deluxe Hotels. He has to his laurels the spearheading a mega project which involved the construction and operations of a Flight Kitchen in New Delhi along with overseeing the operations of various Hotels, Resorts and Flight Kitchens under the flagship of the SAJ brand.
